Kulfi Falooda Recipe

Falooda, is a cold dessert popular in the Subcontinent. Traditionally it is made from mixing rose syrup, vermicelli, sweet basil seeds, and pieces of jelly with milk, often topped off with a scoop of ice cream.

Ingredients

Prepare Kulfi:

  • Milk 1.5 liter
  • Sugar ½ Cup
  • Cardamom powder ½ tsp Elaichi
  • Rose water 1 tbs
  • Almonds 50 grams (blanched,peeled and chopped) Badam
  • Khoya 100 grams
  • Cream 6 tbs

Falooda Sawaiyan / Corn flour vermicelli:

  • Water 1.5 Cups
  • Sugar 1.5 tbs
  • Corn flour ½ Cup
  • Tukh malanga / Tukhme Balanga (Basil Seeds) 1.5 tbs soaked in water
  • Water as required

Assembling:

  • Chopped almonds
  • Kulfi
  • Falooda vermicelli
  • Rose syrup
  • Chilled thick milk
  • Colored jelly (red, green or yellow)
  • Tukh malanga / Tukhm-e-Balang (Basil Seeds)
  • Kulfa slices
  • Chilled thick milk
  • Dry fruit

Kulfi Falooda Recipe

Prepare Kulfi:

  1. In pot,add milk,sugar and cook until milk is reduced to half and keep stirring in between.
  2. Take out half of the milk and refrigerate.
  3. Add cardamom powder,rose water,almonds and khoa,mix well & cook for 5 minutes.
  4. Put the mixture in jar,add cream and mix well.
  5. Let the mixture cool and refrigerate for 2 hours.
  6. Pour the mixture in container,cover and freeze for 6-8 hours.
  7. Pour the mixure into kulfi molds and freeze for 6-8 hours.

Falooda Sawaiyan/Corn flour vermicelli:

  1. In saucepan,add water,sugar,corn flour and mix well.
  2. Turn on the flame and keep stirring until it becomes transparent,thick and glossy.
  3. Put the cornflour mixture in squeeze bottle/piping bag,press the hot corn flour mixture though squeeze bottle into ice chilled water such that the strands of noodles are immersed completely in the cold water.
  4. In glass,add basil leaves and soak in water for 30 minutes.

Assembling:

  1. On serving plate, add chopped almonds,kulfi, falooda sev, rose syrup,chilled thick milk & serve.
  2. On serving glass, add colored jelly cubes, falooda sev, drizzle rose syrup,basil seeds,kulfa slices, pistachio, chilled thick milk and garnish with dry fruit & serve.

Tips

  • If you do not have falooda sev on hand or cannot make at home, you can replace it with cooked vermicelli that has been placed in cold water for a few minutes.
  • You can use store bought kulfi instead of homemade kulfi.
  • You can add more toppings like jelly, rabri or fresh cut fruits.
