You should try a Frittata! This little Italian dish uses minimal ingredients for maximum flavour, and allows for lots of variations within the recipe. one of the simplest recipes ever.
Ingredients
- 1 tablespoon of olive oil
- 2-3 sliced mushrooms
- 1 tomato, deseeded and flesh chopped
- 2-3 eggs, beaten, depending on appetite
- Salt and pepper
Frittata Recipe
- Preheat the grill.
- In a small frying pan, heat the oil.
- Add the mushrooms and soften gently.
- Add the tomato, stir once and then add the eggs. Season.
- Make sure that the egg liquid is evenly distributed around the pan.
- Cook for a few minutes until the eggs are setting.
- Finish cooking the eggs under the grill. The frittata will look brown and puffy when cooked.
