Mutton Yakhni Pulao is a flavorful rice preparation where long grain basmati rice is cooked in a stock made with Mutton and Whole Garam spices. Here is a traditional recipe to make Yakhni Pulao.
Ingredients
- Coriander Seeds ( sabut dhaniya) – 2 tbs
- Fennel Seeds ( Saunf ) – 1 tbs
- Onion – 2
- Whole Garlic – 10-12 cloves
- Dry Ginger ( Saunth ) – 1″
- Salt ( namak ) – 1 tbs
- Basmati Rice – 3 cup (soaked for 30 mins )
- Oil – 1 Cup
- Lemon – 2 slices
- Green Chiilies – 4
- Ginger – 1″
- Egg Yellow Food Color – 1/2 tsp
- Mutton 1 1/2 Kgs
- WHOLE GARAM MASALA :-
Cumin seeds ( Zeera ) – 1 tbs
Whole dry red Chili ( Sabut laal mirch) – 3
Bay Leaves ( Tej patta ) – 2
Star anise ( Badiyan ka phool ) – 2
Cloves ( laung ) – 8-10
Green Cardamom ( Hari elaichi ) – 10
Black Cardamom ( kali elaichi ) – 3
Cinnamon Stick ( Daalchini ) – 2
Mace ( javitri ) – 2
Whole Black Pepper ( Sabut Kali Mirch ) – 7-8
