Chicken Yakhni Pulao Recipe By Fatma Sheikh
Ingredients for yakhni
- whole coriander seeds (sabut dhaniya ) -2 tsp
- fennel seeds ( sauf ) – 2 tsp
- Cinnamon stick ( daal chini ) – 2
- Mave ( javitri ) – 2
- Star anise ( badiyan ka phool ) -2
- whole garlic ( lehsun ) – 4 cloves
- Ginger ( adrak ) – 1″
Directions for Yakhni
- In cooker add 2.5 cup of water and whole above spices.
- cook it until 3 whistle.
- Save the stock and set aside.
How to make Chicken Yakhni Pulao
- In a pan add 1/2 a cup of oil, add 1/2 tsp of cumin seeds,7 caradamom,1 bay leaf ,6-7 cloves,1 black cardamom,9-10 whole black pepper,1/2 sliced onion.and fry until golden brown.
- add 2 lbs Chicken and fry until it changes te colour,add 2 tsp ginger and garlic paste and fry for 3 min, add 2 tsp salt, add 1 cup of yogurt .
- add 3-4 chilli and 1 slice of lemon
- Add yakhni stock and 2 cup of water
- Add 2 cup of soaked( 30 min ) basmati rice.
- Cover it and cook it for 20- 25 min.
- Add orange food color.
FOR TARKA
- in pan take 1/4 cup of oil add 1/2 sliced onion.
- fry until golden brown add 1 whole red chili, and spread it in rice.
- Cover and steam cook (dam ) for 10 min.
- Delicious Chicken Yakhni Pulao is ready to serve.
